We visited bali in jan 2014. So we stayed at ubud and Seminyak - two main areas in bali, around 1.5 hour away by road
Locals at seminyak are not so warm friendly as at ubud. There is a stark difference in the attitude of the locals towards tourists. You will seldom see waiters smiling while providing service to you at seminyak. Though in ubud thy smile so much that sometimes you are overwhelmed by the level of politeness there.
If you want to experience nature, rice paddy fields, peace, then ofcourse ubud is the place to go. If you feel more adventurous then you may go further north to ubud, though I am bit unsure of the availability of vegetarian food there as they may be unpopular with the tourists.
Veg food at ubud is just not a problem. If anything, there are too many veg options to choose from.
If you want beaches and night life, then ofcourse seminyak is the place to be. Although I didn't see many clubs and discs. Night life in seminyak probably means sitting in cafés, live music and food.
Beaches - the beaches are good for surfing and water activities but not for swimming and lounging on the beach. Seminyak beach is on black sand is very dirty. Beach at nasi dua is on white sand but still it for lounging as the sand is not smooth and the sea gets deep very near to the shore.
Bargaining is a pain or an opportunity in bali depending n your temperament. Taxi drivers particularly quote anything and then it's up to you to bargain.
Hotels architecture wise are better in seminyak than other places but they lack personal touch in seminyak in comparison to ubud.
